The "muffuletta di San martino" in Cammarata and San Giovanni Gemini


Ingrediants:

gr. 600 of durum wheat flour

gr. 10 of brewer's yeast

a tablespoon of wild fennel seeds

10 gr of salt, a small spoonful of honey

a tablespoon of oil

water q.s. (250/300 ml)

Preparation:

Dissolve the yeast with a little warm water and pour into the bowl, where you previously put the flour that you mixed with the salt, honey, olive oil and fennel seeds, add the water little by little, the dough must I put everything in the planetary mixer for 15 minutes, then I formed a loaf that I left to rise for 2 hours by keeping it in the oven with the light on, covered with cling film. I formed 6 balls that I put and rest for half an hour in a pan covered with a cloth, I then flattened them and sprinkled with flour, I let them rest for another 30 minutes. I baked at 200 ° for about 15 minutes
